3. Таратор

Тараторът е студена супа (нещо като окрошка) и е едно от най-популярните бързи ястия, което обикновено се приготвя сами, у дома.

Съставките за приготвяне на студена българска супа са: кисело мляко (кисело мляко), вода, ситно нарязана или настъргана краставица, олио, сол, копър, счукан или ситно нарязан чесън.

По желание към таратора може да добавите смлени орехи.

4. Месна яхния (гювеч)

Самото име на ястието „гювеч“ обединява различни български ястия, приготвени в глинен гювеч за печене във фурна с капак.

Всъщност с думата “гювеч” се нарича съд, а когато е малък се нарича гърне или казан.

Ястията от гювеч се приготвят по различни рецепти и могат да съдържат както месо (свинско, телешко, агнешко или заешко), така и постна плънка.

5. Пълнени листа (сарми)

През лятото е основно българско ястие. За сарми (пълнени листа) се използват предимно гроздови листа. Плънката се прави от задушено месо със запържен лук, запържен ориз и всичко се овкусява със сол и черен пипер. Може да се използва и за пълнеж: моркови, гъби, кашкавал и много други. Всичко, което не е мързел!

Може да има вегетариански вариант на сарми или месно ястие от листа с плънка вътре.

6. Супа от кайма

Супата се приготвя от добре сварено и накълцано говеждо или свинско месо, смляно специално за супата.

За подправяне на супата се добавят чесън, оцет, лют червен пипер или лют червен пипер.

7. Чушки палени с ориз – пълнени чушки с ориз

Ястието се приготвя от ароматни, пресни или сушени чушки. Чушките се пълнят по различни начини, както с месо, така и без него по вегетариански – само с ориз и подправки.

Вариантът с месо обикновено използва смес от говеждо и свинско месо или едно от двете.

8. Капама

Капамата е традиционно българско ястие от района на Югозападна България. Историята на българската област – Разлог.

Приготвя се от много продукти: няколко вида месо – свинско, пилешко, телешко, заешко, кисело зеле, към тази смес се добавят луканка или кървавица и ориз. За постигане на уникален аромат и вкус на капама са спазени три важни условия.

Първата подправка, която се използва е черен пипер и дафинов лист.

Три – редът на слоевете продукти за печене.

Трето, съдът се пече повече или поне 4-5 часа на слаб огън и в херметически затворена глинена тенджера.

9. Пататник

За приготвянето на пататника се използват картофи и сирене. Но може да бъде както месна, така и безмесна (постна или вегетарианска).

Класическата рецепта за пататник е постна, като се използват само картофи, сирене, яйца, лук и подправки – сол, черен пипер, пресен джоджен и масло.

10. Шиш кебап или барбекю

(чеверме)

Едно от специалните ястия на българската чеверме е цяло агне, изпечено на шиш. Това ястие е типично за Родопите, но се приготвя и в други части на България.
